Cooking Filet Mignon

What You'll NeedFirst of all, when it comes to cooking filet mignon, you'll need several ingredients. If you're cooking for two, you'll need two filets, some rosemary, butter, crushed garlic cloves, a little Vidalia onion all sliced up, some peanut oil, portabella mushrooms, and then some salt and pepper. Heat the Pan FirstThe first thing that you have to do if you're cooking filet mignon is to start heating up the pan. While the pan is heating, you should allow the filets to come to room temperature. Allow the pan to heat up over medium high heat until it is almost smoking hot. Then you are ready to start the actual cooking. Saute Mushrooms and OnionsOnce you have the pan heated up enough, you'll want to start out by sauting the mushrooms and onions in the pan in a bit of the butter. You will probably have to leave them in for about 4-5 minutes, and you should stir them frequently while you are cooking them. Place Filets in Oiled PanAfter you have finished the onions and mushrooms, it's time to get down to cooking filet mignon. You'll want to wipe out the pan, and then put it back on the heat. Once it is hot enough again, grind some salt and pepper on the filets and then pour your oil into the pan and allow it to spread around the pan. Put the filets into your pan and press them down into the oil nicely. Make sure that the filets don't stick by shaking the pan around so they slide. You'll want to then add the mushrooms and onions back to your pan. If you want a medium done filet, when cooking filet mignon you'll want to allow them to cook on each side for about 3-5 minutes. When you turn the filets, add the rosemary, garlic, and the butter. Allow Filets to CoolOnce you are done cooking filet mignon, you'll want to allow them to cool a bit.
