There are many types of cheese all around the world, just in France, a country famous for its cheese, being over 400 types. No matter where you go, however, you will find cottage cheese, a very popular type, that was made naturally, in peoples homes, for hundreds of years. Actually, the milk was let on the stove to coagulate and turn sour, and this was how cottage cheese was made.

In different countries, cottage cheese knows many variations. The main characteristic, however, is the fact that this cheese is not pressed dry, like other cheese, but it is let to drain, and it is not let to maturate. Cottage cheese producers use low fat milk to obtain it, and the flavor of the cheese is altered in the process. It is quite hard to find a piece of cottage cheese that would taste exactly like the one from older times.

Still, there are some producers that did not deviate so much from the original path, like Springfield Creamery. They say that their cheese tastes like original cottage cheese, but they still use low fat milk to obtain it. You should know, in case you want to follow a cottage cheese diet, that this type has little fat, little carbohydrates, but a lot of proteins.

Cottage cheese diet is mainly recommended for those that are fitness enthusiasts. Because it is a low carb cheese, it is ideal for weight loss, while the protein contributes for building up muscles. Still, keep in mind that cottage cheese has sodium, and some cholesterol, and for about 100 g of cheese eaten, you get 120 calories.

What do we know about cottage cheese?

- It was one of president Nixons favorite dish, that ate it with catsup or black pepper.

- Or, that for only 15 pounds of cottage cheese, 100 pounds of fresh milk are consumed.

There are many ways to consume cottage cheese if you want to enjoy its special taste. You can combine it with black pepper, like president Nixon, or you can combine it with half a spoon of vanilla and some artificial sweetener, in order to obtain some tapioca pudding.

Fruits go extremely well with cottage cheese. Dont be shy and try it with strawberries, bananas, peaches or pineapples. Or you can try to add it to some well known recipes, like cheesy mashed potatoes, macaroni and cheese, chocolate mousse, lemon cheesecake or broccoli bread.

Cottage cheese is healthy and it is good for you. By choosing a cottage cheese diet, you will do your body a big favor, and your taste buds, as well.
