The people that prefer gas barbeque grills say that they like the exact control that they have over the amount of heat that is applied to the meat and other grilled foods. With a gas barbeque grill a setting of 4 will produce the same amount of heat as every other time that you turn the dial to 4, so you know what to expect.
Of course the level of heat that is delivered to food on the grill is also determined by the distance between the grill and the flame. To reproduce the same heat, be sure that the dial is turned to the same heat setting and that the grill itself is set up and situated in that same way if you want the same results.
Being able to count on the exact same level of heat every time you barbeque can be especially helpful when cooking more exotic grill items, such as sea food or vegetables, or even barbeque desert recipes. With an exact level of produced heat, you can be sure that you will not overcook these more delicate items.
The same can be true for certain varieties of meat, of course. If you like a certain cut cooked to a particular degree of rarity, then you'll only benefit from the exacting nature of a gas barbeque grill. There's simply nothing like the precise control of a top notch gas barbeque grill.
So what are the disadvantages? Well, for one thing, you must replace the fuel on a regular basis. Depending on where you live and the nearness of retail stores that carry replacement fuel, this could prove to be rather inconvenient for some people.
Beyond the practical factors, such as fuel replacement, the differences between charcoal and gas grills are really more about aesthetics than anything else. Some people do not like the way that gas barbeque grills seem to flavor the meat differently. I happen to be among this camp.
To me, there's nothing like the taste of a meal cooked on a good old fashioned charcoal or wood fire. I notice that there is a slight 'gassy' taste to food that remains on the gas grill with the lid closed for a long time. But others swear it's my imagination.
Before deciding on which type of grill to get, why not take the time to ask around with friends and try out the two different kinds. Try cooking the same type of meat on both types of grill and see what you notice. Chances are you will have a preference once you've got a little experience under your belt.
