How to Make Caramel - It is Very Simple!

It may surprise you to discover you only need two ingredients to make caramel. They are white sugar and hot water. It is very important that you use a light colored saucepan to make the caramel in. You are going to need to pay close attention to the color changes it makes. With a darker saucepan it can be difficult to be able to tell when your caramel is at the right stage. You want to place the saucepan on the stove and turn the heat up slowly for it to get hot. You need to be careful not to burn the bottom of the pan though. You need it to be hot enough for the bottom of the pan to be warm when you place the sugar inside of it. You want to place 12 heaping tablespoons of white sugar into the saucepan. It is going to take about five minutes for the sugar to really start melting. You want to stir it continually with a wooden spoon during that process so it won't scorch. You want all of the sugar to have a light brown look to it. If you can still see granulates of the sugar than it isn't done yet. You want it all to be a thick liquid and it will take about ten minutes to accomplish this. Don't try to rush the process when you learn how to make caramel. If you do, then it won't come out like it should. As soon as you get it to this consistency you want to remove it from the heat. Add two tablespoons of hot water and mix well. If you plan to coat apples or other items with the caramel you want to do so when it is still hot. If you are going to use it as a dip, use a wooden spoon to scoop it out of the saucepan and into a glass dish.
