Lemon juice is very rich in vitamin C, a vitamin responsible for a series of health benefits. For many years, sailors or sea travelers used lemon juice to prevent the appearance of scurvy. A small quantity of sodium is also contained in lemon juice, so it can be used by individuals preferring a diet low in salt. A measure of precaution must be taken when buying lemons from the market. Many producers prefer to treat the fruit with a chemical compound meant to improve their looks and to maintain them for a longer time. This chemical substance, called diphenyl, must be removed from the fruit, by washing them with unscented soap and a lot of water. Lemon has other qualities as well. For instance, studies have shown that lemon juice vaporized in the air plays an important role in neutralizing some bacteria, like meningococcus, typhoid, pneumococcus and staphylococcus within a duration of maximum one hour and a half. The lemon juice action against bacteria was also discovered when put on some foods prone to contract some bacteria, like raw oysters. In such cases, it is advisable to let the lemon juice work for about fifteen minutes and this way, you will get rid of unwanted bacteria from your food. On a regular basis, lemon juice is used to prevent infection or as a tonic in cases of cold or flu. When you make lemon juice, choose fruit that are fresh, without signs of wither.
