When it comes to preparing vegetables is raw always the best? Contrary to what one may expect, raw vegetables may not always have the maximum nutritional value.

We all know that vegetables are full of vitamins and necessary nutrients our body needs. Even the best diet pills that have supplemental vitamins and minerals because they are that important, however studies have been conducted to determine if the way in which they are prepared influences how they are absorbed in the body.

While it is proven that diets high in fruits and vegetables prevent disease and obesity, some debate is had over whether raw or cooked vegetables have more nutritional value. Through a study that researched the levels of vitamins found in people who ate only raw vegetables, it was found that high levels of beta carotene and only average levels of vitamin A were present. Surprisingly, however, it was found that more than 75% of those studies had below normal levels of one of the most potent antioxidants, lycopene.

From this study, it can be determined that many factors contribute to the potency of the vitamins found in vegetables. Just as hoodia pills are most effective when they are comprised of the stem core, which contains the appetite suppressing compound, which is not found in other parts of the plant, vegetables are influenced not only preparation, by factors such as the area in which they are grown and method of preparation contribute to the percentage of nutrients that are absorbed by the body.

The type of vegetable depends on how it should be prepared for maximum benefits. Studies show that vegetables that contain vitamins B and C, which are water-soluble, lost much of their nutritional value in processing.

Studies also show that cooking vegetables, particularly tomatoes, amplifies the amount of fat-soluble compounds that are absorbed by the body. This is because the cell walls of the plant are broken down and more accessible. To further illustrate the fact that preparation of vegetables effects their nutritional value, examine the study by The Ohio State University which found that the absorption of lycopene and beta carotene, to name a few where dramatically increased when some type of fat such as full fat dressings or avocados were eaten with the vegetables. Whether you like your vegetables raw or cooked, it is just important to eat them. They are necessary for overall health as well as a great way to lose weight.
